All of our wines are crafted to be aged for many years, the number of which we will only know with time. Please stock up so you can regularly sample the wines and not miss any intermediate combinations of subtle aromas that may be short lived or transitions to more complex flavor components. We like to say that we appreciate all phases of wine flavor profiles, but that we only release the wine when the symphony is ready to play!

We’ve come to expect rich dark fruit in our Syrah from Ciel du Cheval Vineyard…and maybe just a few savory notes to keep us guessing. This is a wonderful wine to enjoy with grilled meats, lamb and steaks over mesquite. We’ve also added just enough Grenache from Stone Tree Vineyard to peak your interest and accent the nose. Expect dense fruit and spice on a structure of rich tannins that will give this wine length on the pallet and in the cellar. Bottled on 6/26/10; 50 cases were produced; pH 3.60, TA 6.38 g/L
95% Syrah (Ciel du Cheval Vineyard)
5% Grenache (Stone Tree Vineyard)
Barrels: This wine was aged for 22 months in 50% new French oak from Tonnellerie Vernou and 50% seasoned American oak barrels by Saury.
